Opening in Summer of 2017, All-Wise Meadery is run by Dylan Sprouse, the youngest Master Brewer in the United States. All-Wise, an all local, heathen-owned Meadery, offers its own meads, brewed in Williamsburg, Brooklyn along with other meads from mazers around the United States in our bar portion. Both on tap and in bottle, All-Wise is the location for mead in NYC.
This depends upon preferences but usually it is suggested mead should be served at or around cellar temperature (55f).
Mead is an alcoholic beverage created by fermenting honey and water with yeast. Mead sometimes contains fruits, spices, grains, or hops, all different branches of the same family tree.
The defining characteristic of mead is that the majority of the beverage's fermentable sugar is derived from honey. It may be still, carbonated, or naturally sparkling; and it may be dry, semi-sweet, or sweet.
Long time brewer and mead maker, Dylan works in house to create mead the way the gods like it. When he is not brewing he is "managing" things and often having a glass or two with patrons.
Doug drives around the company vehicle selling our wares like oldtimey snake oil. When he isn't helping the business grow on the meta with a web of distribution spies, he stuffs trash in the car and brings it back to base where he fashions it into lab equipment, growing us on the micro.
Matt is mad money Santa Claus. He's got a list and he checks it more than twice. He keeps us from spending frivolously on arcane toys and makes sure we are meeting the marks.
